Χρησιμοποιούνται οι παλαιώτεροι σε ηλικία αμπελώνες της οικογένειας και αυτό γιατί η σύσταση και η δομή των σταφυλιών είναι πιο πλούσια και ολοκληρωμένη! Οι αμπελώνες βρίσκονται στην γύρω περιοχή του οινοποιείου και ξεκινάνε από 260μ(Βιδιανό) εως και 450μ (Λιάτικο).
Τα στέμφυλα παραμένουν εώς την αποζύμωση με το χυμό ενισχυοντας την δομή του παραγόμενου οίνου…Με αυτόν τον τρόπο έχουμε κρασιά με ένα πιο γήινο χαρακτήρα αρωματικά και γευστικά, με μελένιες νότες πυρηνόκαρπων φρούτων που καταλήγουν σε ένα πιο μπαχαρένιο στύλ. Κρασιά που εκφράζουν απόλυτα το terroir της περιοχής με βάθος και τονισμένες οξύτητες που σε ταξιδεύουν σε ένα διαφορετικό μονοπάτι…
