White beans with fennel

INGREDIENTS:
250 gr white beans
4 onions
2-3 carrots
2 bay leaves
1 bunch of fennel
OVI olive oil
Salt
Lemon zest

DIRECTIONS:

  1. We put the beans in a bowl. We add water until it covers them and we let them soak overnight

  2. The next day we stain them

  3. We put them in a pot of water to boil for 20 minutes.

  4. Then, we strain again and we pour fresh water into the pot with the roughly chopped (2) onions, (2) carrots and the bay leaves.

  5. We cover and let them cook for about 1 hour.

  6. Then, we add extra virgin OVI olive oil to a pot and until it burns a little, we chop and add 2 onions and then we fry them.

  7. After 5 minutes, we add more olive oil along with the chopped fennel. We stir and cover it to cook for 10 minutes.

  8. Uncover the pot with the beans and we remove the carrots, onions and bay leaves.

  9. Once the 10 minutes have passed, we add the fennel to the beans and let them cook for 10-15 minutes.

  10. We serve with lemon zest and OVI olive oil.
