Cooking Class – chapter 2
Explore the local gastronomy, the Cretan products and cook our local recipes that remain timeless from one generation to the next. You are welcome to come to our lovely, traditional and hospitable place in order to live a unique experience.
Our traditional recipes are ready to help you take the next step. All our cooking techniques will be performed by an experienced and professional cook so that we can provide you with the best possible gastronomy experience and recreate our grandma’s time. In addition to following the recipes, you will have the opportunity to take a tour to the awarded for its architecture, stone-built village, to drink the well-known Greek coffee and to learn the history behind the products that will be used.
In this chapter, you will get familiar with our village cooking stories. Looking back to our memories from the village we bring back an image of our grandmothers picking leafy greens from the fields, washing them and cooking them. The best part was that they were making delicious cheese pies, using various of those leafy greens.
Welcome to the chapter in which memories come back to life and in which we will recall the flavours of the village.
Upon arrival in our space you will have the opportunity to take a tour in the Prasses village. It is a lovely stone-built village which is awarded for its traditional architecture.
Afterwards you will be treated to a cup of Greek coffee paired with a required complement treat.
The cooking experience manager will inform you about the recipes, the ingredients, the safety rules and the methodology that we will follow.
After you wear your own apron you will be following the chef’s plan of the cooking experience, starting with analysing the base products which characterize the Cretan diet: paximadi (barley rusk), horta (wild leafy greens), raki, wine, olive oil and honey.
Horiatiki Salata (traditional Greek salad) – It is our first dish.
Vlita (Amaranth Greens) / Radikia (Dandelion Greens) – a presentation of the Cretan wild leafy greens as well as the cleaning and boiling process. In addition, we will boil the tomatoes to make a cold tomato sauce.
It’s time for a break and what comes after is the wine tasting and the olive oil presentation.
Sarikopites (Cretan Cheese Pies) – We will make and spread the phyllo, a Cretan pastry dough, and we will add cheese.. it is a traditional recipe with a touch of sweetness since we will serve them with honey.
Don’t forget that we also have a surprise dish for you that will be made with the use of the Cretan apaki and handmade local pasta!!
You will have the free time to enjoy your own creations..
